Versatile, tasty and lightly flavoured they can be used for stir fries, as a steak, served with a little apple sauce on the side, or even diced up into a lightly cooked casserole. You could even slice them lengthways, hammer them out to tenderise them and turn in eggwash and breadcrumbs then fry as a schnitzel.
