Our mutton comes from our easycare sheep that have finished their breeding life, we then allow them a final summer on grass before they are destined for our butchery. Mutton is darker than lamb, it’s got a creamy rich taste, closer to beef but still maintaining the aromatic overtones that lamb has. Mutton shanks are a must for a Scotch broth, that ultimate winter food that has all you need for the day ahead in a bowl.
