Italian Style Chicken Breast

  • Italian Style Chicken Breast1 tablespoon vegetable oil
  • 2 oz butter
  • 3 whole Hugh Grierson chicken breasts
  • Salt and pepper
  • Juice of 1 lemon
  • 3 tablespoons chopped parsley

Method

  • Slice chicken breast in half lengthways so that each breast makes 2 thin fillets. Heat the oil and 11/2 oz butter in a hot pan.
  • When the butter foam subsides, slip the fillets into the pan and cook for 20 seconds on each side.
  • Remove and set aside on a warm plate.
  • Sprinkle with salt and pepper.
  • Add lemon juice to the pan and simmer for 20 seconds scraping loose the cooking residues with a wooden spoon.
  • Add the chopped parsley and remaining butter, stir rapidly and return the chicken to the pan with any juices.
  • Turn the heat down and cook for a few minutes, turning a few times. Serve with the juices from the pan on a warmed platter with lemon slices to garnish.
